PINEAPPLE RICE (GLORIFIED RICE)
2 c. raw rice
2/3 c. sugar
1 sm. pkg. lemon Jello
1 c. boiling water
1 can pineapple tidbits or chunks
2 c. whipped cream
3 tbsp. sugar
1 tsp. vanilla
Boil rice in 3 quart salted water until tender. Drain and rinse with cool water. Dissolve
2/3 cup sugar and Jello in 1 cup boiling water. Add rice and pineapple. Chill 1/2 hour.
Add 2 cups whipped cream, 3 tablespoons sugar and vanilla. Pour into 9"x13" pan.
Chill until set. Can be sliced. Any flavor of Jello can be used. Black cherry is
especially good.
